Issues are assigned to a single user , and would like to be able to assign a task to a 'team' to avoid bottlenecks in the process.
Can you assign a ticket to more than one user ? So that more than one person will be notified of the task.

Not using the Assignee field, it is single select.
What you could do though is...
^ You could also use a custom field to capture the team, based on Groups - and send the email more dynamically that way.
