On several occasions our clients have informed us that the drop-down menu of boards is sometimes empty and sometimes not, do you have any explanation? Is there a way to correct this behavior so that all boards are always displayed?

Are you asking about the drop-down list of boards, once you have a project selected?
One possible cause of this is when a board's filter would show no issues associated to the project where the board is defined. Have you checked the board's filter?

Thank you for your answer, I have attached some images of what I am referring to if it serves as a guide, as you can see the "Blackboards" menu at first it is empty and when updating the page it is displayed correctly.

Ah, this could just be a page caching issues. I often find that information changes are not updated auto-magically on the pages, requiring a refresh to see the latest. This happens more often with the Cloud version.
If after a refresh the information still does not display, please consider asking your admin to submit a support ticket to Atlassian.

No, I do not. Periodic refresh seems like the work-around when you have been on one page for a while.
