JIRA for resource management

Hi, I want to use Jira for resource planning for my team, but unable to understand where to start. By watching video on youtube, I understood that I must have an option "Organize" to start. Please help me where to initiate the resource planning

You will need to explain what you saw when you wrote "organise to start".  "A video on youtube" tells us nothing (cat videos on youtube probably outnumber Jira related videos by a million to one).

Would you be able to help me which add-on suits best to use for water fall methodology projects on Jira?? 

I know, Jira is made to handle agile projects, but since I have a mixture of agile and water fall projects and I can't go for two separate resource planners, I am trying to have one for both methodologies.
