As of this morning, all emails coming from Jira to our users have been reformatted into plain text with is not exactly easy to read. Is anyone else experiencing this? Any way to fix it?
@Mike Leydet Please check if the Email Format in your global JIRA settings has been changed to text, by mistake. If yes, you can change it back to html, using the instructions from the below document: https://confluence.atlassian.com/adminjiracloud/configuring-email-notifications-776636790.html

We discovered that this setting had somehow changed. No evidence in the audit log, but it's useful to know that I can change the setting globally. Thanks for your assistance! I think that did it!

Thanks. This had happened to our projects too, seemingly automatically. I suspect Atlassian pushed out an update that as a side-effect changed this setting from HTML to plain text (or there's a bug that causes it to switch). We noticed it had switched over a week or two ago but only just got around to investigating/fixing it.
