If a Jira Plan exceeds 5,000 work items, what's the logic on the work that no longer shows up? Ex. shows items that are most recently updated, etc?
We have a couple of plans that are really pushing the 5,000 item limit but there's no more sources for excluding additional issues. Can we continue pushing the issue limit ceiling if all the right things seem to still be showing up?

The answer provided by @John Funk is the most correct one.
If you search this forum on the topic of the 5,000 Work Item (Issue) limit for Roadmap Plans, you'll see that it's been asked quite a few times before in threads such as this one, where you'll learn that it's not an absolute / hard limit, it's a soft limit. You can exceed this number, but the performance of your plan will begin to suffer. This is confirmed in Atlassian's documentation on the topic.
So, start to think of dividing the work up across multiple Plans. That is the same advice that Atlassian provides in their Performance Recommendations for Plans document and has been provided to all that have asked on the same topic in the past.
Removing or hiding Work Items via an exclusion rule is really just a temporary fix that hides the problem for a short while, but is not a good long-term solution.

First off, I don't know what the logic is IF it continues to work and only shows the "first" 5,000 work items or if it just blows up in general. I would also say that 5,000 work items on a single plan is unmanageable in the first place, and you should try to cut that down.

Thank you John, and I agree! I'll be pushing the group to divvy where possible. That said, this might mean also having to break out our existing ARTs accordingly, so that may take some time.

You can hide resolved ticket
Next to your plan’s name in the sidebar, select More actions (•••), then Plan settings.
Select Work in your plan, then select Removed work items.
Select View rules.
In the panel that opens, select the box under Remove work marked DONE more than and enter your preferred number of days.
Select Save.
