You can use @Ashkan Malekly 's strategy for highly customised emails. The other option would be to periodically send a single email which captures all issues which are overdue. Automation for Jira will send one email per overdue issue.
To do this:
A good trick is to change the assignee to "Current User" and subscribe a group, and that way, each agent will see which of their issues are overdue.

I use "Automation for jira" add-on for this in our company. You can set conditions like overdue and put send email option after that.
