Is there anyway to add additional information in Jira user profile like employee id, manager name, role, department name etc,

Without add-on, the best you can do is probably to have a "user directory" project where you list those things as fields on a "people" issue (probably one per person) and let everyone browse it. It won't link to the profiles or inform them in any way, so I'm afraid it is not a great answer.

Search for Jira issues based on user custom profile fields.
Track history when anyone changes/updates user custom profile fields.
I should able to export custom profile fields using csv/excel sheet
