This is new, Jira did not ask for due date before. I cannot create any new stories/issues without due date, which Jira says is required, however I do not have a due date field in which to enter a due date.
Requesting a due date does not even make sense for scrum if a sprint is assigned, but that's a problem for another time. My immediate problem is how do I get a due date field to so that I can s=enter date and create new stories/issues?.

One of your admins has changed the field configuration scheme such that due date is mandatory.
You're right in that due date is not needed for your process, so I would ask your admin to undo their mistake, rather than get due-date added to your screens.
My admin wants to know how to undo that. It's also affecting other users. She has not even touched Jira. My guess is that there has been a new release of Jira and this got messed up in the process (it would not be the first time that something got messed up as a result of a new release). At any rate, how do we get rid of the requirement for a due date?

An upgrade won't touch the field configuration scheme like that, might be worth a look in the audit log to see who changed it.
To fix it though, get the admin to start at the project level. Go into settings and look for "fields". This will give you the list of field configurations in use in this project (there may be only one - if there's more, you'll need to repeat the following bit for each one). Expand the configuration with the > icon, and click the pencil icon to edit the scheme. Scroll to find "due date", then click the "Optional" that will appear next to it on the far right hand side.
