Is there a way to lock (not let them be changed) the due dates for some types of tickets?
Alternatively, can we easily display original due date without having to dig into ticket history?

Yes, have the due date field on create issue and view issue screen but remove it from edit issue screens.
Alternatively, if you only want some users in your project to have the ability to modify it, then create a workflow transition leading from the same status to itself (i.e. Open-> Open) and present the transition screen which has this field for editing and limit the transition permission only to a group/project role who needs to have this ability
