When we originally signed up to Jira we signed up with our organisation email. This email no longer exists so we can not access admin or update our user email addresses because we are being told the system will send code to non existent email to let us into our admin so we are locked out. How can we solve this issue.

The first option is to reactivate or recreate the original admin's email. If that was an email address in a domain owned by your company, that may be possible for your company to do.
If that is not possible then you will need to contact Atlassian Licensing Support. They will ask you some questions to attempt to verify that you are the legitimate owners of the site.

When you regain access I recommend that your company implement a policy to ensure you always have multiple active admin accounts.
