In order to better service our internal customers, we are looking for a way to schedule and link our customer's calendars to their JIRA service desk tickets. This way we can track capacity for in-office visits, schedule hardware tasks, and keep our customers informed when a technician will be available.

For the most correct O365 integration, you should look into the Marketplace apps as there is no work-arounds this.
Microsoft 365 for Jira (by Yasoon): Schedule Outlook/Teams meetings directly from tickets and auto add events to shared calendars.
If you're on Premium, combine with JSM automation to trigger invites on ticket creation. :)

With Microsoft 365 for Jira (Atlassian Marketplace), meetings scheduled in Jira will instantly appear in your Outlook calendar, and you can also link existing Outlook meetings to Jira work items/requests.
You can add a project calendar to Jira and adjust it to your needs. This helps with tracking technician availability, scheduling hardware tasks, and keeping customers informed.
As a side note, we offer a comprehensive Microsoft integration with Jira; including Microsoft Teams and Outlook. This is especially useful for many of our customers where Microsoft tools form the backbone of their daily work and communication.
