We are considering leaving Asana for Jira now that my team is more in the habit of logging tasks. I saw it was advised to manage multiple projects in One Scrum board. I have tried out labels and components but I don't see a way to visualize multiple projects in one board by color.
Is this possible or is it actually better to just setup multiple projects with their own scrum board? My team of 5 is currently distributed across around a dozen active multi-month projects.

It really depends on your way of working, but I feel that it is more correct to have multiple projects, so that it is easier to keep track of project progress. You can then have boards to suit the way that you would like to work.
Remember, boards are just views into the data (projects). Any board can bring in tickets from multiple projects. You can then use Quick filters to show per project or per developer or whatever else you want to see.

from my point of view it is possible. In a board configuration try option "Card colours" and then use queries to filter every project that is on your board and use different colour for each.
Red query --> project = "XXX"
Blue query --> project = "YYY" etc.
