a hop from one version to another should not be needed in that case. Please be aware of all information in upgrading documentation to be found here.
From our experience tests (extensively testing is absolutely needed) are crucial - using a clone of the production system.
Along the way you recognize not only if the upgrade steps from version 7 to 8 for your installation works well but also if there are Apps that are possibly not behaving correctly anymore.
Last but not least users can accomodate with the revamped UI. Jumping from version 7 or 8 brings several new elements regarding UI with it - so make sure you don't miss that step.
