The overview of connected apps was available in the product pages until September 24. Later, this overview moved from the product page to the Atlassian administration page.

In this overview, there is a column called "Installed by."
According to this column, most apps were installed by the system.
For apps installed by users, I would like to know who exactly performed the installation and for which product.
Where can I find this information in this list?
Any idea?

...getting the name of the specific user/admin that installed an app does not appear to be possible.
I encourage you to provide feedback to Atlassian directly about that by clicking on the Give Feedback button in the upper right corner of the Connected Apps page in your environment.
Within Jira the Audit Log is still available in the Manage Apps page, which will provide the details of who installed an app. That keeps only 90 days of information though.
