Modify Status Tabs and Change Status from Edit Screen

I'm looking for assistance on two issues 

1. How do I modify the Status options which are listed on an Issue page? for Example, the tabs at the top of our the page are 'Edit' 'Comment' 'Assign' 'Resolved' 'Rejected' 'Workflow <dropdown>' and 'Admin <dropdown'

I would like the Resolved and Rejected to display different status options. Can this be customized or is this driven based on the current status off the issue? 

2. My team members would like to modify the workflow status of an issue while in the Edit screen. I've tried to modify the screen, but when I search for 'Status' as a field to add, I'm only given options for things like 'Epic Status'. Is this some limitation within JIRA?
