Is there any way to add more columns to Project timeline just like you can add columns to the timeline in Plans? In Plans you can edit the timeline view and the list view but in project timeline you can can't edit the list view almost at all. Now team members need to go to Plans to check out their project timeline, because the timeline view inside the project is just little bit worse. This is so confusing for the users and might be a be a dealbreaker for many project teams to use Jira in the first place.

The short answer is "no". The Timeline feature available when you are viewing a project/board is a basic feature that does not offer much customization. For more customization options you have to use Plans.

In that case, I guess I could hide the timeline alltogether from a project and only use the Plans.

That would seem to be the only option.
I think it is on by default. It would need to be disabled for each Team Managed project in the Project Settings. For Company Managed projects the option is in the Board Configuration so it would have to be disabled in each board.
