I'm making this because after a lot of searching and poring over threads and youtube videos, I still can't find the answer to this.
Here is my scenario (Each bullet is a column visible on the kanban, each sub bullet is a status which should not have its own column):

Right now, using workflow editor, I can't get the option to create a status which does not automatically create a column.
When I delete the column from the board view, the status disappears with it.
When I look in the other places that these settings should exist (project settings > board, and more > configure board), they just don't exist and I don't know why.
I am the creator of everything here, but I am not an admin at the company level. This is a team managed project, however.
Here are a couple articles I referenced in support:

- mentions that you need to go to project settings > board but that option does not exist in my setup where I am the project and board creator and admin.
- this one suggests going to the more menu in the top right corner of the board and configure board, this also does not exist in my view

- why is this in team-managed projects instructions if all the instructions and screenshots specifically pertain to company-managed projects? None of the mentioned features and settings exist in team-managed projects.
What am I missing?

Solution:
I was using a team managed "work management" project template and not a team managed "software" project.
The software project enables you to have multiple statuses per column like a company managed software project. You can't do this with a team managed work management project.
I suspect you are using a Jira work management project, where the project boards follow the workflow automatically.
For more configurable boards, you need to use a Software board (these can be configured to include JWM projects)

A software board can be based on a project or a saved filter. So create and save a filter for your JWM project, then create a board (from a company managed Software project, although I'd recommend that you place it in the "personal" category rather than the current project) based on your saved filter.

Ah gotcha - I may have misworded then: I am building (well, built) a team managed project and board with filters, etc.
The problem was that there is zero attempt by atlassian to point out what the instructions they write are for.
I was reading team managed project documentation when they were really referring to just a single software project template and ignoring all the other variants they have. If you use anything but the software project, the instructions just will not make sense.
I switched from a work management to a software (both team managed) and ended up getting a lot closer to what I was looking for.

I see in this thread, same question and a mod answered that this is the wrong project type, but didn't provide any context as to which is the right type for these features to be present and usable in.
What would that be?

Is the only option to use software development kanban?
Because this kills so much of the board's usability. The arrangement of functions in the top bar, calendar, the report generation feature, and how the roadmap and list views work are incredibly useful, but the inability to have a separate backlog and no way to place multiple statuses within a column are huge pain points for a project/board style focused on work management and cleanliness.
Switching to software development style board means a lot clunkier of an experience where every page and function loads much slower and less info is surfaced in the at a glance ticket view, plus tracking productivity and deadlines as well as managing reporting is a whole suite of separate steps that require the typical manual work to address :/
I either chose to have a perpetually cluttered board, or adding an hour+ to each day's work by manually managing a calendar and report.
