Need to Restrict Sprint Field to specific roles

we are trying to restrict the "sprint" field to only be editable by certain user roles. is this possible to do?

Yes it is possible

In general, sprint actions require the Manage Sprints permission. However, there are some sprint actions (e.g. adding issues to sprints, removing issues from sprints) that require the Schedule Issues and Edit Issues permissions.

Just make sure the users that you want to restrict, do not have the permission to schedule issues or the group they belong to do not have schedule issues permission
