We have access tasks that create multiple subtasks for different teams in our organization. We are unable to assign teams that are different from the main/parent tasks. We are using a custom field for the teams, but would like to get away from that in favor of the built-in Jira teams. Are there options for this?

If I understand correctly, you have a parent task with Team Alpha assigned to it, and you want subtask 1 to be assigned to Team Beta, and subtask 2 to Team Delta, etc. Is that correct?
If so, I believe that's not possible as this documentation page states
If a Work Item is assigned to a team, its subtasks are also part of that team.
What you could do is create regular tasks (instead of subtasks) and link them, or you can assign each subtask to an individual. If your access tasks always have the same (sub)tasks, you might want to check out an issue templating app on the Marketplace to make it easier.
