I currently use the following setup in my gadget which was fine but over time, the graph is getting too crowded each day, so I looked into Dynamic Range and Between Date setting and saw that the total count of Resolved and Created is based on the date range. I also tried using the Weeks setting but our users says what is displayed is confusing with the week number. Is there another approach to have something like the dynamic date range but be able to still show the overall totals for all Created and Resolved?

Yes, there is a better approach for having something with dynamic date range and in the same time to be able to still show the overall totals for all Created and Resolved. It is about these gadgets offered by our Great Gadgets add-on.
Reported vs Done Chart created by using the Release Burndown Burnup Chart gadget. This would be my first recommendation for you. See this article from our blog to understand why and how to configure it: A powerful Reported vs Done chart for Jira dashboards.
The second option would be the Cumulative Flow Diagram (CFD) chart offered by the same app.

You will be better off purchasing a plugin unfortunately. Look in the marketplace where they have multiple options.
