Newbie question on epics

One of the lines says ‘An epic can span more than one project, if multiple projects are included in the board to which the epic belongs.’

I am not understanding this. I thought the hierarchy was Jira project-> epic-> story.

Even if I have a Kanban board which has multiple Jira projects, say A,B,C, how can I do the following: Create epic in A. Add stories from A,B and C
