Hi all,
I created a new Nextgen project but when I move a task from In Review to Done, the issue is not showing the strikethrough mark in the backlog.
Do I need to set a property in my workflow? In the old project set this action was implemented by default.

The strike-through is Jira telling you that you have resolved the issue. That is done by setting a resolution in the resolution field - any resolution in that field means the issue is resolved.
The board configuration in next-gen(team managed projects) has a "issue resolved" check mark in columns. If you move an issue into a column with it set, the resolution is set automatically. It should be cleared if you move out of that column.
To fix it, start with a look at your process and how it is mapped into Jira. Then for whichever case you have of the two above

The strike-through feature is actually determined by the resolution field. As long as there is a value in the resolution field the issue will have a strike-through. If there is no value the strike-through will not happen.
