I just created a new instance for Jira software for testing, and I tried to invite a new user but no email is sent.
Any ideas?

Good afternoon @Daniela Dragomir Welcome to the Atlassian community.
The issue might be associated with any blocks at the server end for that particular email address. The only way to fix this issue is to raise Atlassian support request to check and remove any blocks from their side.
