You can use the 'Two Dimensional Filter Statistics' on a Jira dashboard. You will need to create the appropriate query to list your stories and select the priority for one of the table axis.

You should be able to use the Issue Statistics or a Pie Chart gadget to on a Jira dashboard to get these counts.
(These docs are for Jira 6.4, but I can't find docs for the most recent version at the moment, and all of those docs still generally apply to the most recent version of Jira.)
