Perhaps something like this:

 assignee WAS EMPTY DURING (startOfDay(-1), endOfDay(-1)) and assignee is not empty

In addition, by saving the above JQL as a filter, you could configure the Issue Filter Formula gadget (or Advanced Issue Filter Formula gadget) offered by our Great Gadgets plugin to display the COUNT of the issues from this filter; this way you will have the number of tickets assigned yesterday displayed on your dashboard.
