On cloud JIRA can I make project restricted for outside consultant to see only it and no others?

Hello, We are having consultant coming onsite to work on the project. I have created JIRA project, now I would like to invite them to it, but curious if I add them to our account, can I assigned them, so they can see only one jira project?

It's a bit old, but the principles in the main answer haven't changed!  (In fact, they've not changed since Jira 3.6, which is older than the answer)

Yes.

Cloud and Server are diverging, but at the moment (and I think for a long time forward), this approach to user management won't change.
