Our Jira board settings were changed across all projects for some reason, why?

It has moved our cards into an order that doesn't make sense instead of allowing us to prioritize them ourselves. How do we fix this?

check the board filter and see if you have Order by Rank

Board settings > General > board filter

Sounds like your board was copied and shared between projects if it is affecting all projects.  You should start by double checking to see how it is shared to understand the impact of the changes.
