If you are talking about a pie chart displayed on a dashboard, those can be based on filters. Simply construct and save a filter that retrieves only the data you want in the pie chart.
Kanban boards are simply a way of viewing issues stored in a project. When you make updates through a Kanban board, you're really changing data in a project. Whatever changes you make to issues through the board will be visible everywhere else in JIRA where those issues are referenced.
