I want to be able to keep the main ticket open when the sub tasks are closed. Is there an automation to prevent the parent ticket (issue ticket) from being closed when the sub tasks are closed to?

By default Jira does not automatically close the parent issue when all the subtasks are closed. If that is happening automatically, then somebody has added an automation to do that or modified the workflow to cause that to happen.
Have you checked the workflow and automation rules to see if either of those is the case?
If you look at the history for a parent issue that was automatically closed, you might see that the status change was performed by Automation For Jira. You can also click on the Rule Executions fields (in the Details panel) to see the history of automation rule executions for that issue. That is another way to find if an automation rule has made a change to an issue.
Jira does show a pop-up in boards when the last subtask is moved to "done" asking if you want to update the parent issue to "done". I've not searched yet to see if there is a way to disable that.
