Whats the pro and cons of using Jira Server versus Jira Datacenter ?

The short version - Jira Server is cheaper and easier to manage as it is a more simple configuration. Jira Data Center has increased uptime (0 downtime upgrades are possible) and better scaling (via nodes).

You need hardware and SA knowledge. You should also have a UPS and regular backups. Basically the same issues with hardware and associated environments people are trying to avoid by going to the cloud.
