各担当者や各タスクの作業時間を週次や日次で管理・閲覧できる方法はありますでしょうか。

In terms of managing and viewing the work hours of each person or task on a weekly or daily basis, I would like to suggest the Jira third-party application created by our development team at SolDevelo called “Worklogs - Time Tracking and Time Reports”.
Our app allows you to track the time spent by the members of your team on a variety of tasks. Per your requirements, you can group the reports by days, weeks, months or years and filter them by e.g. issues or subtasks:
Worklogs is easy to use and versatile, allowing to create flexible time reports and filter them in a granular manner, making it a great choice both for Jira newcomers and long-time users.
It's worth noting that the app uses Jira's native time tracing and time logs, meaning that any time tracked previously with this method before its installation will be present in Worklogs.

my suggestion is to try the following powerful app https://marketplace.atlassian.com/apps/6572/timesheets-by-tempo-jira-time-tracking?tab=overview&hosting=cloud .
You can retrieve all necessary information about logged time per issue, project and other dimensions basis.

Clockwork Free or PRO provides a timesheet where you can view the Worklogs of each user or issue. Once installed, Clockwork syncs with your existing Worklogs, and you can view the Timesheet immediately.
The Timesheet can be filtered by many components, including custom fields, allowing you to streamline your report to a desired output. You can also select a custom date range or choose for the built-in period, like the previous month, last week or even the last seven days.
With the Timesheet, you can also break down other details about the time tracked, like the rolled-up time at the Epic or total time for an Issue Type.
The Timesheet can also be exported in CSV format.
