My current company has a very simple view of Jira to enter user stories, but another company I worked for had a very "full" layout with many boxes and check boxes to tag Epics, tags, enter Notes, Acceptance Criteria, etc. It also communicated with Salesforce. Is there some place I can see the different layouts or version of Jira?

The new issue view does not allow to change the layout. So, the custom fields are displayed as small boxes on the right side of the issue page as you noticed.

The new issue view has many other limitations, like missing comment security, no issue linking, no issue labels, etc. I guess that Atlassian will work on improving the new issue view so hopefully, the layout will be more configurable too.

You might be looking to edit the Screen in your JIRA Project. Under Project Settings choose Screens. From here you can add/remove fields from the create, edit and view screen.

** Also note that the integration with Salesforce might have added some other fields that are not currently available in your companies JIRA.

Well, that helped, but I was specifically looking for the fields that were called Acceptance Criteria that were previously a part of the User Story and/or Bug layout. Or Notes, I don't see that either.
I've looked in Classic Scrum layout and Next-Gen Scrum layout and nothing. I have the ability to add a text field, but it's a one-liner and doesn't allow you to expand it. Previously, it functioned the same as the description box at the top of the issue.
