I'm evaluating Jira Software (Cloud Premium to be specific) for use within my organization. I'm going through a security review right now. Does anybody know if would Atlassian/Jira support would have direct access to company data directly or indirectly?

Regarding support access specifically, Atlassian will ask for your permission to access your data if necessary, usually in relation to your organization opening a support case. You then grant the access, if you wish, and can revoke it at any time. It is also automatically revoked when the case is closed.
