Is there a way to shut off the Auto-Formatting that occurs in the comments field in the New View that JIRA now has ???

Thanks for reaching out, and the old editor used a Wiki Markup style editor and is being fully replaced with the functionality of the new editor that uses markdown, and we want to makes sure the theme is standardized across the platforms, as noted in the status update in:

The second theme is wiki markup generally. To be transparent, we are closing this issue as we have no plans to support wiki markup in the new editor and new issue view. We're supporting markdown across Jira, Confluence, and Bitbucket Cloud to provide a more modern and consistent editing experience. For anyone using multiple Atlassian products, we believe this will provide the best editing experience. You can read more about the changes here.
However, with that said we are always looking for feedback on what functionality works best as covered in another note on the same request:
Note: What is and isn't a distinct feature can be tricky to define, especially in something as involved as the issue view. We'll do our best to capture things as accurately and comprehensively as possible.
Is there a direct feature that is impacting you that we could focus on, One I know comes up a lot with the new auto-format options is the "Smart Link" feature that converts hyperlinks to issues to cards, as covered in the following feature request for a reference:
But overall let me know what you're looking for in the new interface that is currently missing or needs improvement so we can get the feedback to the development team for improvements.
