When an issue is transitioned to a certain status, I would like to automate the logging of time to the work log with the time it spends there.
I've tried multiple iterations, I'm currently setup using https://community.atlassian.com/forums/Jira-questions/Re-Log-time-to-quot-Time-Tracking-quot-field-with-automation/qaq-p/2251511/comment-id/565145#M565145
However, I need it for updates (Not created), to status changes only.
Is this possible?

Welcome to the community!
You might consider using time-tracking apps. Some of them have automatic time tracking.
I can recommend you our Clockwork Pro for Jira Time Tracking, or Lite app that has automatic time-tracking feature.
When automated timers are enabled, Clockwork will log time for an assigned whenever an issue is transitioned to active status, and stop it whenever transitioned to inactive status. You can choose which status from your workflow is active/inactive. It also considers users working hours to make sure that the logged time is accurate.
Automatic timers ensure that all work is logged without users having to take any actions.

It's such a shame this isn't a feature offered by Atlassian, given the manual function already exists!

With the 'Issue Transitioned' status, we don't have a way to define the operations for which the rule must execute. If the user changes the status during issue creation, the rule will execute.
To avoid this, you can specify the status in the 'To' field as well. Like lets say: To Do.
In this case, the rule will run only when the issue is transitioned from To Do to In Progress.
If you have a global transition for the destination status, you can include multiple statuses in the To section of the trigger.
