i been wondering if i can configure somehow a new project in Jira for Help Desk so everytime that an users sends an email to my IT support a ticket gets created and assigned to default assignee
Yes that can be done using a incoming mail handler in Jira , you would have to create a mail server and then link that mail server with the mail handler where you would define in which project would the ticket be created, for the default assignee part you can configure that in on the create transition of the workflow.
