I want to implement a KPI for support team handling tickets.
The KPI is average assigned ticket per user. I want to track this on a daily basis so I can eventually graph this for review.
How can I achieve this?

I'm afraid that this is not possible by using Jira's default reports of gadgets. An option would be to search on Atlassian Marketplace for a plugin that provides a gadget or report for tracking this.
If you consider the idea of using a plugin, our Great Gadgets app offers a Cumulative Flow Diagram Chart gadget that lets you visualize the number of tickets assigned to each user along the time on a daily basis.
All you have to do is to configure the gadget with a filter that returns the issues, set time range, group data by 1 day and to configure to generate bands by Assignee.

Welcome to the Community! I'm a big fan of Rich Filters for Jira Dashboards and I'd recommend 'Rich Filter Simple Counter' and 'Rich Filter Smart Counters' as a way to get the count of issues assigned per user.
