I know you can only have a single assignee, but is there a location to indicate who the back up assignee is? This is helpful when the assignee is out of the office to know who is responsible in their absence,
If not, is there a way to change the name of the "Reporter" field to something else like "Back up"

For your use case, I suggest creating a new custom field of type user that you can call: back up assignee.
of course, you will have to be an administrator to be able able to do that.
