I would like to know how i can backup my jira project and move it to another instance,

I suggest you do that with an Atlassian Marketplace app called Revyz Data Manager for Jira. You can do a free trial and complete what you need to do.

Thus, it allows you to back up and then restore your data to another Jira instance, the scenario you mentioned.

Atlassian offers a native feature for copying data from one cloud instance to another. There are limitations in what can actually be copied.
