×My Goal is to have 3 projects under one project board so that we can put all different project tickets into a single sprint. I have a separate board from the ones mentioned later that has a filter with multiple project types included (1 Service-Project, 2 Software-Projects).
How do I get information across all projects to display in the summary section?

As an alternative, you might find the Sprint Report feature in the Time in Status app by SaaSJet helpful.
This report is based on the JQL of your board, so it includes all relevant tasks across your selected projects. It provides detailed visual metrics such as:
Sprint progress (committed vs completed)
Team velocity over recent sprints
Assignee workload
Completion and carryover rates
Scope changes during the sprint
It’s a great way to get the insights you need when native summaries don’t cover it all. Let me know if you'd like more details or assistance getting started.

The short answer is you cannot. The Summary page provides information for the project, not for a board.

In your image you are seeing the Summary information for the project that is shown in the breadcrumbs at the top - "Workday Soup".
To get something similar spanning multiple projects you would need to work on constructing a Jira Dashboard to display similar widgets based on the filter you are using for your cross-project board.
There is a change request to have the option for a Summary page per board, though it specifically asks for that in the context of multiple boards for a single project.
