I am trying to create a dashboard for a project and use the standard gadgets. When I add Sprint health and Sprint Burndown gadgets I cannot see the projects board to select, I can see many other boards but not the project I am assigned.
Any reason why only some boards are showing?

The first thing to check is if the boards are Scrum boards.
Only Scrum boards have sprints and burn (Kanban boards measure throughput rather than burn, and local team boards can be assumed look mostly Kanban too)
I didn't create the board, will have to take a look, this is very helpful though, thank you. If it is currently configured as a Kanban board and not a Scrum board if I reconfigure it, will current issues etc. remain part of it?

Yes, very much so, if you get all the filters right.
Filters, and so the boards and gadgets that use them are not containers for issues, they are views.
Reconfiguring any of them is not going to touch your issue data, it will only change what they show you and how.
Scrum and Kanban boards (from Jira Software) work off an issue filter, and then do some more sub-filtering dependent on their config. Most other boards work the same, but you can't change their filters from their base "Project = XYZ".
TLDR: you can not damage your data by reconfiguring your boards.

What type of the board you want to select? It it scrum board?
