I am trying to create a burndown chart for a specific feature/epic. We don't use sprints and we use aspects and sub-tasks. All our sub-tasks and tasks are costed. How can I create a burn down chart to ensure we will hit or get close to our cut off date. Any help us much appreciated!

You can try Agile Reports app for this. It provides a burnup chart and predicts the possible release dates. Provided you have the data in Jira and it's configured, of course.
You will probably need to create sprints even if you don't use them because reporting plugins rely on how much work the team delivered within a certain period of time. You will also need to use time or story points for your tickets. From your request I wasn't sure whether you use them but I assume you have something like that.
Even if you don't use sprints, you can create a separate board in Jira for reporting purposes specifically. If you use Kanban, there's not many Kanban reports out there really.

I think I don't fully understand "aspects". Did you mean "epics"?
Also, why don't you just start using sprints so you can use the jira burndown chart as it was intended? Let's say you don't work with sprints in the more strict sense... anyhow you have a due date to release a number of functionalities, don't you?
If you don't want to do this I guess you can only create your chart with an external tool. Let's say as a very simple option that you export your jira project data (task, estimated time, logged time, start and due date) to .csv and import that into a custom template you've prepared in a spreadsheet.
