Yes, you can add a post function to do that.
Take a look at Script Runner if you do not already have that installed as a plugin. There are examples in there that will allow you to create sub-tasks, etc

If you are going down the script runner route, when you add the post function to create a sub task you will have a variety of options to add detail from the parent. The Summary is one of the main option, but under additional actions you can set custom fields from those of the parent. So basically, edit your workflow, in the transition where you need a sub task, add a post function and select script postfunction, then select the create subtask option.
