I need to edit a kanban or scrum template in order to include a new type of issue.
Context:
I create an automation that creates some new issues (of a new type) when a new project is created, that new type issue is included in the Default scheme, but not in the kanban or scrum templates, which are the ones the team uses when creates a new project, so, the rule for the automation fails.

What I do is I create a sample Scrum project and a sample Kanban project. I modify it to add the issue types and workflows I want, and then I leave it alone
Whenever I create a new Scrum or Kanban project, I select "Share settings with an existing project" and then I select my template/sample project.

natively it is not possible to edit Jira native templates or create custom templates.
That's why we built Project Templates for Jira (free for you as you are under 10 users) that allows both within certain limitations.
While it is possible to change native Kanban and scrum templates with our app, it is not possible to include new issue types, only to clone or predefine issues that should be created in the new project.
For that you would have to create custom project templates that are similar with the native templates and there you can specify which issue type scheme to use. Please take a look and ask if there are any questions.
