In a given Company Managed project each type of issue in the project can have a unique workflow, or share a workflow with other types of issues in that project.
If you have one Sub-task issue type, that issue type can have a different workflow than the other issue types in the project.
You cannot have multiple workflows for a single issue type. All issues of type "Sub-task" would share one workflow.
I really appreciate your time and attention but my question is regarding software projects in Jira.

In Jira Cloud there are two project architectures; Company Managed and Team Managed. Your Jira Software project could be either Company Managed or Team Managed while also being a Software project. If you look at the bottom of the navigation panel on the left you will see text that tells you if your project is company-managed or team-managed.

You need to create the workflow you want to use for your subtask issue type, and then associate that workflow to the subtask issue type in the Workflow Scheme for your project.
