I would like to automate the creation of Jira tickets, if an email is received at our maintenance or service departments.
IS this possible and if so how would I go about it?

You can create email handlers: Create issues and comments from email
In Jira Cloud in JSM projects emails is one of the channels and it's as easy as choosing the right email name
