Can JIRA projects be exported from a OnDemand installation?

At present time we're using a OnDemand installation of JIRA+Bonfire+Greenhopper and we been thinking that in the future we might like to have everythig running in our own servers.

The questions is if Atlassian provides the options to export our information to a JIRA hosted installation.

Yes. You can do a full backup and perform a restore on a JIRA Hosted (https://confluence.atlassian.com/display/JIRA/Migrating+from+JIRA+OnDemand+to+a+JIRA+Installed+Site).
