I notices that not all my tasks are listed in my project and I cannot find the missing tasks anylonger.

Hopefully, your tasks are just hidden (and not deleted), and you are able to find them.
If you'd like to protect your Jira data from accidental deletions going forward, my team at Rewind developed an automated Backup app to back up your entire Jira instance (not limited to just Issues).

If yo need to recover a deleted issue/ticket/task in Jira Cloud, you can use Restore Deleted Issues app (developed by our team) which keeps track of deleted issues and allow you to recover them. In order for the app to work, the app must have been installed at the time the issue is deleted. As a preventive action for future deletions you can try Restore Deleted Issues app.

Tasks do not automatically disappear from projects. If you don't see them any longer, it is either because someone has deleted them or because they are hidden from certain views. The first would be permanent, the second is happening (usually) for performance/usability reasons.
To make sure all your issues are still in Jira, you can run a simple search. Navigate to Filters / Advanced search and select your project from the list of projects. All your issues should appear below in the search results. If you notice issues are missing, there is a good chance they have been deleted.
If all your issues are there, you can be assured that they can always be retrieved this way. If this is the case, probably certain issues are no longer showing from e.g. a board view. This is usually the case for issues that have been fixed in Jira. These are usually in the rightmost column of a board and they are typically hidden automatically 2 weeks after they were moved into that column. This helps you and your teams focus on work that still needs to be done rather than on completed items.

An issue can't disappear from a projet unless someone move them to a different project or delete them.
Did they disappear from a sprint or from the project ? Can you find them in the issue navigator with this query :
project = "My project"

There are two ways this could happen: someone deleted the issue or the moved it to another project. You could try entering the issue key into the search bar. If moved then the issue key will be in the history. If nothing found it was likely deleted.
