We are currently using Agile for IT Sprints/Backlog, etc. and also using Kanban boards for our Operations department and Admin department. I have a question for you. Are Boards able to be locked down to only those who are permitted to see them? For example, can we lock down the Admin Department Board to just those Admin people and not have the Operations people able to open or see it? Right now, everyone can see everything.

Yes this is possible by setting permissions on the underlying board filters. However, note this will only hide the board. Depending upon the underlying project permission scheme(s) users may still be able to navigate projects and create their own filters/dashboards. So if you want full lockdown, you'd need to lock down the Browse Projects permission on the relevant permission schemes.
