Can the Release Notes be modified/configured to include an additional field that is not already include in the default template?

We would like to include more details, than what is included in the default Release Notes.

Doubtful in Ondemand.

Yes, thank you. I realize regular Jira allows customization, but we are using the OnDemand Version and I can't access the jira-config.properties file

Yeah, thought so. You could contact Altassian with a support ticket and ask whether customization is allowed.
